Leftover Thanksgiving Turkey Meatloaf

In 2019 we made a delicious meatloaf with our famously thick ketchup, cranberry sauce, cooked turkey, herbs and dried cranberries. It was easy to make, quick to cook and a total taste revelation! It was so moist and flavorful, and the cranberry and ketchup topping made it extra delicious! The fruit and herb combination just scream with holiday joy! - The only issue is, the recipe might outshine your actual thanksgiving dinner!

Serves 4
Ingredients
6 cups cooked turkey meat, finely chopped
1 cup seasoned stuffing cubes
½ cup milk
1 celery rib, finely chopped
1 small onion, grated
1 carrot, grated
2 Tbsp olive oil
2 large eggs, beaten
¼ cup dried cranberries
½ tsp salt
¼ tsp pepper
2 tsp fresh thyme, finely chopped / minced
2 tsp fresh rosemary, finely chopped / minced
½ cup whole-berry cranberry sauce
½ cup Judge Casey’s Truly Original Ketchup - ketchup for sale
¼ tsp hot sauce / sriracha
Instructions
2. Chop your leftover turkey into small pieces, about ½ inch cubed. This will help the loaf hold together once cooked.
3. In a large bowl, combine stuffing cubes and milk. Let stand 10 minutes.
4. On medium heat sauté celery, onion, and carrot in olive oil until onions are translucent.
5. Break up stuffing cubes with a fork. Stir in eggs, celery, onion, carrot, dried cranberries, salt and pepper.
6. Combine thyme and rosemary and add half to the mixture.
7. Add turkey to mixture and mix all ingredients well.
8. Press into an ungreased 9x5-in. loaf pan.
9. Combine cranberry sauce, Judge Casey’s ketchup, hot sauce and remaining herbs. Spread over meat loaf.
10. Bake for 30 minutes.
11. It's important to let a meatloaf rest for at least 10 minutes before slicing, tented with foil to keep it hot.
